Peanut Butter Shortbread Cookie


  • 225 grams flour
  • 115 grams caster sugar
  • 150 grams unsalted butter
  • 5 tbsp Whole Earth organic smooth peanut butter
  • Pinch of sea salt


  1. Mix the butter and peanut butter together in a bowl and whisk until fully combined
  2. Add in the sugar to the mixture and mix well until the mixture is light and fluffy
  3. Gradually sift the flour into the mixing bowl and mix all of the ingredients together until a dough forms
  4. Roll the dough into thick cookie shapes and bake in a pre-heated oven at 180 degrees for 15 – 20 minutes until golden brown
  5. Allow the cookies to cool before eating and if you’re feeling like an extra treat serve with a dollop of your favourite Whole Earth peanut butter
