Peanut Butter and Chicken Lettuce Wraps


  • 1 Chicken Breast
  • 1 Little Gem Lettuce
  • A bunch of Spring Onions
  • 1 Carrot (shredded using a peeler)
  • 1 Clove of Garlic
  • Handful of Coriander to serve
    For the sauce
  • 1/3 Cup of Whole Earth Mix Seed Peanut Butter
  • 1/3 Cup Honey
  • 3 tbsp of Soy Sauce
  • 3 tbsp of Water
  • 1 tbsp of Lime juice


  • To make the sauce place all of the sauce ingredients into a saucepan, mix and heat on medium-low for around 10 minutes.
  • Place another pan on the heat and chop the chicken breast into bite-sized chunks. Add some oil to the pan, add the garlic and fry the chicken for up to 15 minutes (or until the chicken is cooked through and no longer pink).
  • A few minutes before the chicken is done, add your chopped spring onions and shredded carrots into the pan and cook through.
  • In the final minute of cooking add half a cup of the peanut sauce to the chicken and vegetables.
  • To serve, place the cooked chicken and vegetables onto the wraps, drizzle with the remaining sauce and add chopped coriander to garnish.
