Make the marinade – place the soy sauce, brown sugar, garlic, ginger, curry powder, salt and lime zest into a bowl and mix well
Add the chicken into the marinade sauce and cover and refrigerate overnight
Soak four wooden skewers in a bowl of water
When ready to cook the chicken place the pieces onto the pre-soaked skewers and place under a medium grill, turning occasionally, for around 15 minutes (or until thoroughly cooked)
To make the peanut sauce add coconut milk, peanut butter, brown sugar, soy sauce and red curry paste to a saucepan and bring to the boil. Reduce the heat and simmer on low, stirring the mixture regularly. Add the lime juice just before taking off of the heat
Serve the skewers on a plate alongside a bowl of peanut sauce for dipping
