Chicken, broccoli and peanut noodles
2 tbsp vegetable oil
½ red pepper
½ yellow pepper
½ bunch spring onions
200g cooked chicken
1 tsp of crushed ginger
1 tsp of crushed garlic
2 tbsp Whole Earth Smooth Peanut Butter
2 tbsp soy sauce
250g dried egg noodles
Heat the oil in a wok/large frying pan until hot.
Stir-fry the broccoli, peppers, courgette and spring onions over a high heat for about three minutes, or until they are starting to soften.
Roughly chop the cooked chicken and add to the pan with the garlic and ginger and fry for a further two minutes.
Mix the Whole Earth Smooth Peanut Butter and soy sauce in a bowl. Pour into the wok, stirring thoroughly to coat everything.
Cook the noodles accordingly to the instructions and then stir through the cooked noodles and serve immediately.
